Our products

At Chideock Champignons, we are seriously passionate about all things mushroom. Our grown produce is checked daily and plucked carefully by hand. When foraging, we leave any treats too young, old or chewed and pick each mushroom with care. Below is a list of what we grow and sell, and what we can find in season. BLUE GREY Oyster/common oyster/oyster shelf/tree oyster/pleurotus ostreatus

Delicate, nutritious and delicious, these little shelves are our main, staple product. They are enjoyed worldwide all year round - a true wonder of nature. The largest one ever found was 8 feet in circumference! Super healthy (a good source of fibre, Iron, zinc, folic acid and Vitamins B1, 3, 5 & 12, C and D (among others)), these beauties are also thought to lower cholesterol, contain anti-oxidants and also contain anti-cancer properties.

Pink Oyster/the salmon oyster/the flamingo mushroom/pleurotus djamor

The most beautiful looking mushroom at our farm, the Pink Oyster is soft, fragile and sumptuous. Similar in terms of nutrition as the Common Oyster above, this product differs in taste and texture a little. It is a little less fibrous, but when cooked to browning it is sometimes considered a reasonable replacement to bacon.

Sunny in colour, Yellow Oysters are a pretty sight and a delectable dish. It has an almost cashew-like taste when prepared properly, and has been used to garnish salads. We love them as they bring a bursting yellow light to our growing room, and soak up the light.

shiitake/sawtooth oak mushroom/black forest mushroom/Lentinula edodes

Native to the Far East, Shiitakes are just beginning to take off as a culinary supplement on our shores. These mushrooms add real texture and substance to noodle and miso dishes and are fantastically good for you to boot. They are a great source of Pantothenic Acid, Selenium, Zinc, Vitamin B2, 3 and 6 plus also Vitamin D. Shiitakes have also been trialed for use in the fight against obesity, for boosting the immune system and even as an agent to counteract acne. There are few healthier commercially grown mushrooms.


the wild stuff......

We love getting out into nature and practising sustainable foraging just as much as we love watching our own mushrooms grow. Unfortunately, commercial growing of these mushrooms is not something we can do so we cannot pick to order. However, watch our blog and Facebook page for live updates on when our foraged good become available and get in contact with us as soon as possible!

chanterelles/girole/Pfifferling/Cantharellus cibarius

Fruity, golden and almost nutty to the taste, finding Chanterelles is a forager's delight. They proudly trumpet themselves out the ground and are a chef's dream. Packed full of Vitamin D, Vitamin B3, Iron and much more, these golden treats are super good for you and super tasty. Giroles can be used in a wide variety of dishes, but can't be beaten on toast with butter and garlic. Yum.

porcini/cep/penny bun/king boletus mushroom/boletus edulis

Desirable and delicious, Ceps are the true kings of the forest floor. We like to dry them, as doing so loses none of their flavour. Amazing in a risotto or linguine, these mushrooms are a highly prized delicacy and sell quickly. Absolutely chock full of Vitamins B3, 5 and 9, these meaty delights are also very high in Zinc and Copper. Finding Porcinis genuinely sends a thrill through our spines here at Chideock Champignons, giving us the buzz in which symbolises why we love what we do.

The hedgehog mushroom/Pied-de-mouton/sheep's foot/Hydnum repandum

Unique in its spindly nature, the Hedgehog is undervalued in the UK. It has an almost sweet taste, and its sturdy nature makes this delicacy a candidate for freezing. Regularly sold alongside Chanterelles in markets in Italy and France, this should be considered as high a prize as their golden cousins. Full of minerals good for the body, if you've not tried them give Hedgehogs a chance - they are absolutely bang on at breakfast.
